Lemon Yogurt Cake

Instructions

  1. Preheat oven to 350 degrees. Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large bowl, whisk the Greek yogurt, lemon zest, lemon juice, honey, eggs, and oil until smooth.
  3. In another bowl, mix almost flour ,oat flour, baking soda, and salt.
  4. Gradually fold dry ingredients into the wet ingredients until just combined.
  5. Pour batter into prepared pan and bake for 35-40 minutes or until a toothpick inserted comes out clean.
  6. Let cool completely before slicing.
